The atomic unit
Every page is a single country seen through a single lens — Thailand's dish, Japan's word, Norway's unsolved case. Two ways to travel the same records: read one country end to end, or follow one thread across the whole world.
One each — no filler
Each country gets exactly one definitive entry per lens: the single thing actually worth knowing, chosen on evidence, never padded. Where something genuinely isn't there, we leave the lens faint rather than invent a pick. The completeness count on every country tells the truth.
Two rhythms
Evergreen lenses — the dish, the animal, the word, the mystery — are written once and built to last. Living lenses — the artist, the label, the event — are a current issue, re-filled on a cadence, each carrying the date it was last reviewed and an archive of what came before.
On food
Every dish is given a plant-based version that respects the original — never “better than”. Where a dish is contested, or already plant-based, we say so plainly. The point is the food, told straight, with a real thing to cook at the end of it.
